How do I properly uninstall WebODM manual installations from my Windows PC and my Mac so I can just used the new Installer file. Or Can I just run the new Installer over it? Do I lose all my projects?

On both, if you don't need docker, uninstalling docker will do the trick. For the most user friendly migration, download the backup of each task from the Dashboard before uninstalling and then manually restore in the new installation. This might be a lot of work if you have lots of tasks and you'll need to recreate the projects. We still need to improve this area https://github.com/WebODM/WebODM/issues/1899

@pierotofy Do I need to delete the WebODM folder from the C: Drive or the new installer will just overwrite it?

Does the installation lets you pick where you want it install?
Yes, it will actually suggest that you use the drive with the most free space on it, I've a drive specifically for webodm, my N drive, and each time I go to update it suggests my O drive(that's the drive I use to store all my flight logs)
