I've got loads of Old projects within WebODM, and was wondering if there was an easy way of Archiving them, before removing them, so that I could reimport them at a later date if required, so Basically an Export function at project rather than plan level?

At the task level it's easy (Download -> Backup, then Import -> Backup), but at the project level, it's something that needs to be improved. You could save the project folder, but you'll lose the metadata (project title, description), as well as the task metadata (task names, 3D annotations), maybe those aren't super important, but re-importing them requires zipping each individual task folder within the project and re-importing manually... not exactly a nice process.

Until then, maybe a workaround could be to move the project folders (to free up disk space), add a "archive" tag to the project titles, then if you ever need a project, just move the project's folder back into place, that way you won't lose the metadata (but you'll free disk space)
